How They Are Made
We use exclusively fresh Sicilian citrus fruits, locally grown and harvested at optimal ripeness.
Whole, untreated fruits are carefully selected for their intense aromatic profile and the natural richness of essential oils found in the peel.
Their local origin ensures absolute freshness and exceptionally short processing times an essential condition for preserving the vibrancy of aromas and the fruit’s varietal identity.
It is this primary quality, an expression of Sicily’s sun and terroir, that makes it possible to obtain a naturally fragrant oil authentic and deeply rooted in its origin.
The fresh citrus fruits are hand-cut with a knife to preserve their integrity, the aromatic oils in the peel, and the freshness of the pulp.
They are then combined with Nocellara del Belice olives to initiate the co-milling process.
The paste obtained from the co-milling of olives and citrus fruits is slowly mixed at low temperature in a controlled environment.
This stage preserves the oil’s phenolic profile and allows the natural aromatic compounds of the fresh citrus to integrate harmoniously into the lipid matrix.
The co-milling process produces a full bodied aroma, as it comes from the entire fruit from peel to pulp.
The fresh, vibrant notes of the zest blend with the softer, juicier nuances of the pulp, resulting in a citrus expression that is rich, natural, and never overpowering.
