      Le olive, raccolte a mano, vengono lavorate a freddo poche ore dopo la raccolta, per preservarne intatta la ricchezza aromatica.
      L’olio è poi custodito sotto azoto in silos di acciaio, a temperatura controllata, per garantirne freschezza e integrità nel tempo.
